Dassai 23 Junmai Daiginjou Hayata is a unique Sake  that went into a special type of CO2 micro-bubble sterillization process done in the lowest temperture controlled enviroment . The process is very sucessul to leave a lot of flavoeful profile of the brew .

This method started with collaboration reserch between Professor Yasuyoshi Hayata ofMeiji University and Asahi Shuzo reserch division.

Silky smooth flavorwith a lovely hits of fresh peach or even muscat grapes . Beautiful harmony of taste and flavor .Decent amount of umami leaves the palate to yearn for more sips. One of the best sake Asahi Shuzo has ever made .
