Dassai Beyond (獺祭 磨き その先へ) is the pinnacle of the Dassai range, created to go beyond the renowned Dassai 23 Junmai Daiginjo. Rather than simply making Dassai 23 more polished, Dassai developed Beyond as a distinctly different expression, representing the brewery's pursuit of a new level of premium sake craftsmanship.
The sake is crafted from Yamada Nishiki, Japan's premier sake rice, while the exact rice-polishing ratio is intentionally not disclosed. Dassai explains that Beyond was developed over more than 10 years of concept and development, with the objective of achieving a level of quality and complexity that could justify its position as the brewery's highest-end sake.
Dassai describes the wine-like concept of Beyond as pursuing beautiful aromatics together with complexity, layers and a long finish. The brewery recommends first tasting Dassai 23 before moving to Beyond, as the contrast helps reveal the distinctive character of this exceptional sake.
