Isojiman Junmai Ginjo “Hidden Winter Brew” (Hizo Kan-zukuri) Nama-zume is a refined seasonal sake crafted by the prestigious Isojiman Shuzo brewery in Shizuoka, Japan. Known for producing elegant and meticulously balanced sake, Isojiman emphasizes purity, precision, and the natural expression of premium rice and water.
The term “Kan-zukuri” (寒造り) refers to sake brewed during the cold winter months, when lower temperatures allow for slower fermentation and greater flavor refinement. “Hizo” (秘藏) indicates a carefully aged or “hidden reserve” batch, while Nama-zume means the sake is pasteurized only once, preserving fresh aromas while maintaining stability.
