Juyondai Ryusen Hayabusa Junmai Daiginjo (十四代 龍泉 隼 純米大吟醸) is one of the rarest and most prestigious expressions ever released by the legendary Takagi Shuzo brewery. Introduced as a limited-edition successor to the iconic Ryusen series, Ryusen Hayabusa represents the pinnacle of the brewery's pursuit of innovation and craftsmanship. The name "Hayabusa" (隼) is inspired by the powerful rapids of the Mogami River that flows beside the brewery, symbolising speed, purity, and unwavering precision.
This extraordinary Junmai Daiginjo is brewed using Seiken II, a proprietary sake rice variety developed after several years of experimental brewing by Takagi Shuzo. Polished to an exceptional 35% rice polishing ratio, the sake is fermented at ultra-low temperatures to preserve its extraordinary elegance and aromatic complexity. Ryusen Hayabusa delivers a luxurious profile of ripe orchard fruits, delicate florals, and refined umami with an exceptionally silky texture.
