Levantine Gin Oak Aged 500ml

Levantine Gin Oak Aged is a barrel-rested expression of the original Levantine Gin from Milk & Honey Distillery. After distillation, the gin is aged in red wine barrels (STR casks) for several months, allowing the spirit to absorb gentle oak character while retaining its botanical core.

Unlike typical London Dry styles, this expression sits between gin and whisky in character. The aging process adds softness, warmth, and complexity, creating a more mature and contemplative gin style. The result is a spirit that is often described as herbaceous, woody, and slightly savoury, with a distinctive Mediterranean influence.

It is designed for sipping and spirit-forward cocktails rather than traditional light gin serves.

Tasting Notes

Colour:
Light golden amber from barrel ageing.

Nose:
Juniper, lemon peel, rosemary, thyme, pine, and soft oak with subtle vanilla and herbal tea notes.

Palate:
Medium-bodied and slightly oily texture with juniper, citrus peel, warm herbs, cinnamon-like spice, and gentle oak influence. The wine cask maturation adds depth without overpowering the gin structure.

Finish:
Long and herbal with lingering citrus, soft spice, and restrained oak warmth.
