Product Description
Tatenokawa Joryu (上流) is a premium Junmai Daiginjo from Tatenokawa Brewery in Sakata, Yamagata Prefecture, showcasing the brewery's expertise in ultra-high rice polishing.
The rice is polished to just 18% of its original size, meaning approximately 82% of the rice grain is removed. According to Tatenokawa, achieving this level of polishing can take approximately two weeks, compared with around 18 hours for rice polished to 50%. This meticulous process is designed to remove unwanted flavours while preserving the desirable sweetness and umami of the rice.
Joryu is positioned by the brewery as an entry point into the world of ultra-highly polished sake, sitting between its 33% polished Kyuryu and more extreme expressions such as Gokugen at 8% and Komyo at 1%. Despite the extensive polishing, Joryu retains a satisfying sense of volume and flavour rather than becoming overly delicate.
