Zýmē Kairos 2021 is the iconic flagship wine of Azienda Agricola Zýmē, founded by renowned winemaker Celestino Gaspari, one of Italy's most respected innovators in Veneto. The name "Kairos", derived from the ancient Greek word for "the perfect moment," symbolises the ideal balance of nature, time, and craftsmanship. This extraordinary wine is produced from an exceptional blend of 15 different grape varieties, combining both indigenous and international grapes to create one of Italy's most distinctive and collectible red wines.

The 2021 vintage was shaped by a balanced growing season that delivered grapes with remarkable concentration, freshness, and aromatic precision. After meticulous hand harvesting, selected grapes undergo a traditional appassimento (natural drying) period to intensify flavour and complexity before fermentation. The wine is then matured in French oak barrels for approximately 24 months, followed by extended bottle ageing before release. The result is a richly textured yet elegant wine that combines remarkable depth, freshness, and exceptional ageing potential.

Tasting Notes

Colour:
Deep, intense ruby red with garnet reflections.

Nose:
Complex aromas of ripe blackberry, black cherry, blueberry, dried plum, violet, Mediterranean herbs, dark chocolate, tobacco, cedar, sweet spices, and balsamic nuances.

Palate:
Full-bodied and beautifully layered with flavours of black fruits, Amarena cherry, cassis, cocoa, liquorice, espresso, sweet spices, and mineral notes. Rich, silky tannins are balanced by vibrant acidity, delivering exceptional harmony, elegance, and depth.

Finish:
Exceptionally long and persistent with lingering notes of ripe dark fruits, dark chocolate, spice, tobacco, balsamic herbs, and refined oak.
